Hooked on Fish Florentine
Let me just start by saying even Gary, my husband, likes this recipe.
I’ve made Fish Florentine since we were newlyweds, and that was a long time ago!
Here is the quick and easy recipe, which works for keto menus, using sole or orange roughy.
Fish Florentine
4 fillets of sole or orange roughy (up to 1/3 pound each)
2 Tbsp. olive oil
1/4 – 1/2 cup chopped onion
1/3 cup grated Parmesan cheese
Salt and pepper to taste
10 oz. frozen spinach (defrost, then squeeze out excess water)
2 Tbsp. butter
3-4 cloves of garlic, minced
2 Tbsp. lemon juice
Paprika
- Place fillets in oven-safe serving dish which has been sprayed with Pam.
- Heat olive oil in medium skillet. Sauté onion until softened. Stir in cheese, salt, and pepper. Add spinach and combine.
- You’re going to roll up the fillets, so place the spinach mixture lengthwise down the middle of each; roll or fold over. You may want to tuck additional amounts of the spinach mixture inside the folded fish. Otherwise, just save the extra for a side dish.
- Melt butter. Stir in garlic and heat. Once the garlic browns a bit, add lemon juice and simmer for 2 minutes. Pour over fish and sprinkle with paprika.
- Bake at 400 degrees F for 15-20 minutes. Serve immediately.
